# How-To:

01 - Bring 2 cups water to a boil in a medium saucepan. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all water is absorbed. Fluff with a fork and set aside to cool slightly.
02 - Whisk together tahini, lemon juice, olive oil, water, garlic, cumin, salt, and pepper in a small bowl until creamy and smooth. Add additional water to thin if desired consistency is not achieved.
03 - Divide the cooked quinoa evenly among 4 bowls. Top each bowl with equal portions of baby spinach, white beans, cherry tomatoes, cucumber, and red onion.
04 - Arrange avocado slices over each bowl. Sprinkle with toasted pumpkin seeds and crumbled feta cheese if using. Drizzle the lemon-tahini dressing generously over each bowl immediately before serving.
