- Line an 8x8-inch baking pan with parchment paper, allowing overhang on all sides for easy bar removal.
- Combine peanut butter, honey, and butter in a large saucepan over medium-low heat. Stir continuously until melted and completely smooth. Remove from heat.
- Gently fold the Honey Chex cereal into the warm peanut butter mixture until every piece is evenly coated.
- Transfer the mixture to the prepared pan. Press firmly and evenly using a spatula or the back of a spoon to create a compact layer.
- Place chocolate chips and 2 tablespoons peanut butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.
- Pour the melted chocolate mixture over the cereal base. Spread evenly with a spatula to cover the entire surface.
- Refrigerate for at least 1 hour until the chocolate is firm and the bars are completely set.
- Lift the bars from the pan using the parchment paper overhang. Cut into 16 equal-sized bars and serve.
