# How-To:

01 - Heat olive oil in a large pot over medium heat. Add the leek and cook for 3 minutes, stirring, until softened.

03 - Stir in carrots and cook for 2 minutes.
04 - Add zucchini, asparagus, and peas. Cook for an additional 2 minutes.
05 - Pour in the vegetable broth and diced tomatoes. Increase heat to bring to a gentle boil.
06 - Add the pasta, dried thyme, and dried basil. Reduce heat to a simmer and cook, uncovered, for 8–10 minutes, or until the pasta is al dente and vegetables are tender.
07 - Stir in the baby spinach, fresh parsley, fresh basil, and lemon juice. Cook for 1–2 minutes, until the spinach wilts.
08 - Season with salt and pepper to taste. Ladle into bowls and top with grated Parmesan and a drizzle of olive oil, if desired. Serve immediately.

# Expert Hints:

01 -
  • This soup captures the fleeting sweetness of spring vegetables in one bowl, celebrating them instead of hiding them in heavy sauces.
  • It comes together in under an hour but tastes like it simmered all day, perfect for weeknight dinners that feel special.
02 -
  • The pasta will continue absorbing liquid as it sits so if making this ahead reserve some extra broth to loosen it before serving.
  • Spring vegetables vary in tenderness so test your asparagus and adjust cooking time if needed.
03 -
  • Buy your vegetables the same day you plan to make this since spring produce loses its sweetness fast.
  • Reserve a handful of fresh peas to add right at the end for pockets of sweetness.
